These Glera vines were planted on impossibly steep slopes, all farming and harvesting must be done by hand. Guia has historical significance in the the role they’ve played in the foundation of the “Col Fondo” style of Prosecco. “Col Fondo” roughly translates to “sur lies” and the intention is that the wine undergoes partial fermentation in the bottle. After maturing in cement vats, the wine is bottled and left temperature controlled (15-18°C) for the yeasts and residual sugars to ferment in the bottle. After 60 days, the yeast settles, leaving that unmistakable natural preservative that leads to the wine’s characteristic aroma, texture, and flavor profile.
Caneva da Nani is located in the hilltop village of Guia in the Valdobbiadene of the Veneto where the Canello family has been growing grapes in these mountains for 5 generations, making wine for themselves along the way but only officially became a winery in 1971. Massimo has been at the helm of his family’s operation for the past 10 years, though his father Giovanni remains an integral part of the farming and winemaking tradition. “Nani” is Giovanni’s nickname and “Caneva” is Venetian dialect for “shady spot to sit and drink wine.” Although the property lies within the Prosecco di Conegliano-Valdobbiadene Superiore zone (highest altitude, most respected terroir) he cannot call his col fondo by its DOC name. The DOC does not allow for the wine to be sold under the Superiore DOC if it has a crown cap.
