50% Macabeu, 50% Grenache Blanc
Certified Organic and Biodynamic
50/50 hand and machine harvested from 15 year old vines grown on clay and limestone soils. Directly pressed whole cluster and fermented separately in stainless steel tanks with indigenous yeasts. Juice undergoes full malolactic fermentation with no stirring of the lees. Blended once malolactic fermentation is completed and then aged for 7 months in stainless steel tanks. Light filtration and low dose of sulfur (80ppm) is added right before bottling.
Born into a family of vignerons from Anjou, Oliver left his home at 18 to continue his studies of oenology in Bordeaux. After working in Saint Émilion for several years, he met Stéphane Derenoncourt, the Bordeaux winemaker and consultant, and learned the importance of working in harmony with nature and reflecting the uniqueness of the land and the grapes in his wines, ideas not taught to him in school. At the end of 2000, Olivier began searching for a domaine to call his own and eventually found his future property in a quiet village nestled between the Pyrenees, Corbières, and the Mediterranean Sea. Starting with 8.5hA and now grown to 25hA, the domaine was certified organic in 2002 and fully biodynamic in 2010.
