100% Chardonnay sparkling wine from a sustainably farmed Santa Lucia Highlands vineyard. Primary fermentation finishes in neutral French oak with no malolactic, followed by 27 months on the lees and a low 4 g/L dosage. Citrus, apple and chalk with fine bubbles and a little creamy texture from the long lees aging.
